I started using this rub about a year ago.  At first, it was strictly salmon but I have ventured into using it on other meats by altering the ingredients (Basic Rub II).

This is a fantastic rub for salmon.  When I first used it, I loved the texture after cooking.  Simple to make.  I usually make up a large batch and store it for a few months (it never lasts that long).  To cook with it on salmon, I use aluminum foil and olive oil.  Take two sheets of foil.  Oil up the fish and place it skin side down on one piece.  The coat the top with the rub.  I lay this on the grill for 2/3 the cooking time (about 8 minutes).  Then I flip on the other foil which has been oiled for the remaining time.

This turns out wonderful.  I also tend to grill a ton of veggies like eggplant, onions, squash, peppers, etc.  Makes a great meal.


1 cup Brown Sugar

1 tbsp Paprika

1 tbsp Chili Powder

1 tbsp Garlic Powder

1 tsp Salt

1/2 tsp Black Pepper

1/2 tsp Ground Coriander

1/2 tsp Cumin

Mix and put on fish.
