This side dish is a big hit at home.  The first time I made it, I liked it so much, I made once a week for months.

This is a GREAT side dish and tastes great.  Use this recipe as just a starting point to work out your taste preferences.  This is enough for 2 servings.  


2 Tbsp butter

1 Tbsp honey

1/2 Tsp dried rosemary

1/2 Tsp garlic powder

Salt and Pepper to taste

5 carrots peeled and cut lengthwise

Set the oven to 400 degrees.  While it is warming up, wash, peel, and cut the carrots and place on a cookie sheet.  In a small saucepan over low heat place the butter, honey, rosemay, garlic powder, salt, and pepper.  Once all melted, pour over the carrots.

Place in the oven for 35 minutes.  They should be carmelized and it you poke with a fork, they should be tender.
