I love rice.  I love fried rice.  I have never been that good at making it so I have tried various recipes to try to get it right.  This one may not be perfect, but it really tastes good (and it is easy).

Fried rice is great.  Why?  You can put whatever you want in it.  This recipe is for basic fried rice.  Feel free to add/remove whatever you like.  I like to make this recipe and then add seafood or any other types of meats and proteins.  I also just eat it AS IS (with a bit of hot sauce).

Now the take the amounts for the ingredients with a grain of salt.  I tried to make it correct but I really do not measure for most of these things...I just kind of put it together.  I figure that in most homes, about 1.5-2 cups of rice is about normal and that is what this is based on.


3 Tbsp Sesame Oil

3 Eggs


Carrots - diced

Green Onions (only the green parts)

Onion, i like it chunky sliced not diced

2 Garlic Cloves, minced

1 Tbsp Ginger, minced

2 Cups Rice (very cold)

Frozen Peas

Soy Sauce

Like I said, this recipe is not really designed to measure and follow.  You decide what you like and how much of it.  I will throw in my take as I have made it.

First, grab a good skillet (wok if you have it - I do not and use a cast iron style skillet).  Heat it up pretty high - about med high heat.  Pour 1 Tbsp of the oil in pan.  Add beaten eggs to the skillet and cook.  Do not over cook.  They should still be a bit soft.  Transfer the eggs to a plate.

With pan on Med High heat, add remaining oil (approx 2 tblsp) with the carrots and onions.  Cook till translucent/golden (usually about 2 mins at this heat).

Add the garlic and the ginger and continue cooking and stirring.  Usually about 1 minute.

Add the rice, peas, and cooked eggs.  Make sure that the rice in not in lumps as it makes it harder to stir.  Also add soy sauce to your liking (I add about 2 tblsp).  Cook until it is all hot.  You will know.  Just keep spooning it over and over.

Add some salt and pepper and then take off the heat and transfer to a plate.  Good eating.

Now if you plan on adding meats, do that in the last step as well but make sure they are already cooked.
