With summer here, so are the veggies..specifically okra and tomatoes.  Yes, you can get the canned version but why?  You can easily make this yourself and it tastes so much better (and it is cheaper).

There are two ways to make this: using frozen okra or fresh okra.  We use flash frozen a lot since it is always available but if we can get local fresh, we use it instead.  The recipe is actually very simple.  In a skillet, put in the oil over medium heat.  Put in the garlic, onion, and cayenne pepper to get it going.  Then add bell pepper for a few minutes.  Now toss in the rest (okra, tomatoes, spices).  Stir and cook.  We typically cook for about 15-20 mins and then let it simmer until we are ready.  Yes, this makes a lot but we eat it every day as leftovers.  Feel free to eat alone or over rice.  Both are excellent.

1 tsp cayenne pepper

1 bell pepper (color is your choice - we like red)

1 bag frozen okra (about a lb) or same with fresh (but already cooked)

1 large can diced tomatoes (we prefer San Marzano 28oz)

Dried basil

Salt and pepper

Feel free to add more to this recipe.  We like adding fresh corn, bacon, sausage, or whatever (shrimp is fantastic).  This can be used as is or as a base for tons of other indgredients.
