This is a great side and easy to make. Also, it is great for picnics and get togethers since it does not contain any ingredients that could go bad in the heat.
Like most of my recipes that I write, I do not put in the exact amounts to use. This is a prime example since it contains many things that people may want a LOT of or maybe not. This salsa can be eaten as a side item OR used as a dip for corn chips. I usually just eat it as a side and it tastes great.
Note that this recipe is somewhat bland (no heat or salt, etc). Once you mix it up, taste it, and then add what you think it needs to fit your crowd (usually the HEAT).
I think this recipe requires salt and pepper but just adjust to your taste. Same with hot sauce and/or peppers. This recipe contains the basics. Fix it. Taste it. Then add your own flair.
1 can black beans, drained and rinsed
1 can whole kernel corn, drained and rinsed
1/2 red onion, chopped
green onions, chopped (use anywhere from 3-5)
1 large tomato, chopped
2 jalepenos, take out about half the seeds
4 garlic cloves, minced
2 tablespoon olive oil
2 limes, juiced
cilantro, stemmed and chopped (I use a lot)
